Catherine Applegate is a PhD student and member of Dr. John Erdman’s laboratory in the Division of Nutritional Sciences. She received her B.S. in Clinical Nutrition from the University of California, Davis and completed her M.S. in Human Nutrition and dietetic internship at Texas State University. Catherine’s research interests include the influence of diet on cancer development and progression, with her current research focusing on the effects of dietary tomato and tomato bioactive intake on the molecular outcomes of prostate cancer. She is particularly interested in understanding the changes that occur with androgen signaling and androgen metabolism in aggressive prostate cancers and how dietary intake may impact those changes.
